The original and the best:

Nigella's - How to be a domestic goddess

It's brilliant.

There are some trickier recipes, but also lot's of easy ones.

I make the Lemon drizzle cake loads and it is so easy, but really good.

The Good Housekeeping Step-by-Step book is fab www.amazon.co.uk/Good-Housekeeping-Step-step-Cook/dp/0091864941/ref=pd_sbs_b_3

It really is idiot proof with lots of pictures. Has LOADS of recepies as well as cakes, desserts, breads etc & gives an intro & background into each section.
