Easy low-carb dinner ideas anyone?

Hiya, DP is diabetic and has been told that there is now a significant change in attitude towards diabetes controle. Previusly a high-carb, low-fat diet was thought of as the way to go but there appears to be a school of thought who now believe the opposite. In truth, DP has been on way too much weight by eating too many carbs and so we're giving a low-carb diet a go. However, we're already sick of eggs!
Does anyone have any easy recipes for quick(ish) dinners?

Please ignore my dreadful spelling. I have a small child who doesn't like to sleep, but that's a whole other story.

can you do protein and a lots of vegetables? Like grilled fish and a huge salad with seeds etc to bulk it out a bit? are lentils carbs (confused emoticon...)?

Anthony Worrall Thompson has a whole range of brilliantly tasty, diabetic specific cook books as his dad is diabetic. I have been type 1 for 20 years, so don't fret about not eating tasty stuff.

Can't copy out all of the recipes, but a quick search should bring you up all of his recipes. Any of the Judith Wills cookbooks will also provide you with low fat, carb watching, tasty meals.

Diabetes control should be carb controlled, and all diets for adults, should be fat aware. Diabetes makes your chances of a heart attack much much higher if you have high colesterol, but colesterol (i.e. low saturated fat) control is really easy these days with packaging details, and good awareness will mean he won't have to use Statins either
