We use this a lot, these are some of our regular recipes:
mackeral fishcakes
mackeral risotto
mackeral mixed with plain or greek yoghurt with baked potatoes (also can be used as sandwich filling or on top of a puff pastry sheet to make a mackeral tart, or inside to make pasties)
white sauce with mackeral, rice or potatoes to accompany (usually do a mix with tuna for this one, can also add hard boiled eggs and top with mash for a fish pie).
Ds's have always liked it and it is a great way to get oily fish into them!

or if you're feeling really lazy it makes a great easy pasta sauce:

fry some onion, tip in tin of tomatoes, after 10 minutes stir in the mackerel and if you want to up the veg content, bung in some frozen peas and cook till done.

eat with pasta. Yum/
