Fresh lentils?

Why don't you get fresh lentils in the shops?

Or fresh rice?

I think that the reason you can't get fresh lentils is because they would spoil quickly with the moisture inside so that they have to be dried for practical reasons. I'd imagine that rice is dried for a similar reason.

Although I'm guessing that if you were able to grow them fresh you could cook them from fresh iyswim.

You can sprout them, or you can grow some pulses. We have grown wax beans, eaten some fresh and dried the rest.

if they where fresh they would have a very short shelf life indeed.
