Quick - something quick to do with red cabbage

I have new pots on the stove. Broad beans have been popped and peeled carrots and onion chopped. What can I do with the red cabbage? i always shred and saute - is there any other option?? (veggie here btw so no meat in the meal.)

Suggestions gratefully received.

okay I am moving towards the shredder - butter, creme fraiche and black pepper at the ready....

saute onions in saucepan, add red cabbage, then red wine vinegar and some sugar, cover and cook until soft.

Shred it and boil briefly to soften. Drain.

Melt a generous knob of butter and gently fry a sliced onion. When it's soft, tip the cabbage back into the pan. Stir and season. Then add a generous glug of apple juice and a little bit of cider or white wine vinegar. Turn the heat down and sweat for about 10-20 minutes.

Not sure ds will eat it but he is a fussy pants and if I catered to him every night I think I might die from boredom....
