Seafood Risotto? Yum

MuchLessTiredNow · 22/06/2008 15:47

oooh, both sound lovely - when would you add the seafood to the risotto? Would you defrost first?

I do the second thing Christiana does, ie with pasta, garlic and chilli, squeeze of lemon, or white wine if you have plus fresh basil or coriander to serve.

Or fish pie (as it's freezing and blowing a gale outside) - heat up and add to a white sauce, top with mash and bake. Sliced hardboiled eggs in the pie optional if you like.

Or paella

seafood salad, prepare seafood as per instructions on pack and add to a salad.

or add to a simple spaghetti dish with tomato sauce.

Once you have made the risotto add the mixed seafood at the very end just to warm through. Defrost first.

Paella or Cullen Skink or defrost and fry up with garlic and olive oil and have with pasta
