How do you make scrambled eggs in a bain marie?

I did the usual scrambled egg mixture of egg and milk and put it in a bowl over a pan of boiling water and it was rank, it just kind of curdled and didn't really cook. I thought doing eggs that way was supposed to be the best, that they'd be fantastically creamy. What did I do wrong?

I never use milk in scrambled eggs - just melt plenty of butter in a pan, add beaten eggs, and scramble slowly.
