an egg to help make the breadcrumbs 'stick on'?....am eggless and it's too rainy/too far/too much hassle to go to shop and my neighbour is out ...need to be ready for eating at 5pm before my pack of ferral kids go into complete meltdown..thanks

Yes mayo will work or if you are stuck, just do seasoned flour and then milk a few times before the breadcrumbs

have mayo but not sure if it's 'discard 6 weeks after opening'date is due or even past ..have milk though so thats a possible

I think deep frying/blasting in a hot oven will more than kill any germs in the mayo!!
After all its expected that cooking will kill any germs in the chicken.
