...and what can I do (if anything) with the vegetables once stock is made?

Or am I pushing the value of food too far ?

I think that may be luck-pushing taken to extremes . Compost them and your reward is being able to feel smug and virtuous.

Don't I get to do that anyway for making my own stock ??
