Having a mexican dinner - Margheritas or what ?

Title says it - Its a pretty calm mexican dinner not too spicy as its too hot here and it is for Italians who prefer 'gentle spice'. Want to do a jug of cocktail what shall I do and more to the point how do I make it?. No access to cocktail mixes but have a pretty vast drinks cupboard
Need a virgin version for me as pg !!

Mojito's!

3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 1/2 oz light rum
club soda

In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir thoroughly. Top with ice. Add rum and mix. Top off with chilled club soda (or seltzer). Add a lime slice and the remaining mint, and serve.

You can just make yours without the rum

Can manage a sunrise I think and if I can find mint and limes pudding that sounds yummy- Selzer is that like fizzy water ?? Here can get Tonic, sprite,possibly soda water but not sure if supermarket has it any more.

Can I hijack slightly - I made mojitos on saturday but was disappointed as sugar wouldn't dissolve and just stayed in little heap at bottom of glass - is there a cure for this? Thanks

you're supposed to get special brazilian sugar which is kind of powerdered and formed into little spheres, rather than granulated

now, on the mexican question, i urge you not to serve mojitos which are from the wrong continent.

margaritas: 2:1:1 tequila:triple sec:lime; shake up with ice and pour into a salt rimmed glass. cointreau generally stands in for triple sec in our house.

virgin version would be pretty sour so as an alternative might i recommend sangrita (google it) - tomato/orange/lime juice mixed up with seasonings and you can have it on its own while your friends knock it back with tequila.

lulu, I was just going to say something about the wrong continent!

I do my Margaritas like this (They have them like that in DF):

1 measure lime juice (fresh), 1 measure Cointreau, 1 measure tequila. Add loads of ice cubes and put in blender (Osterizer). This way you get frozen Margaritas, which everyone loves.

Thanks I managed to get 6 limes !! lots of Mint and have tequila, cointreau so will do a version of both and see what happens lots of ice in the freezer and I will get making them later pity I can't sample as I go along but the mint smells heavenly in the kitchen !
