I have to make a cupcake batch for DS to take to school tomorrow, and I've just discovered we have no eggs. I can't face the shops, and Google has only wierd American recipes using inseed oil or ground swedes or something. Grateful for any ideas

This is for an eggless chocolate cake

85g butter/marg
2 tbsn golden syrup
1 tbsn vanilla extract
300g s/r flour
100g caster sugar
25g cocoa powder
1 tsp bicarb of soda

put butter, syrup and vanilla into heatproof bowl add 300ml boiling water and whisk to combine.
sift flour, sugar, cocoa & bicarb into large bowl and tip in butter mixture.
Stir till you have a smooth batter.
can bake in 20cm round cake tin or cup cakes.
bake at 160/140 fan/gas 3 for 50-55 mins for large cake or (guessing now) 20/25 mins for cupcakes.

Hope that helps!

If you go to this site and search for cupcakes, then you can filter out eggs from the list of ingredients, and it gives you a big choice of recipes.
