Making puff pastry tart thingys, any tips?

I'm doing the starters for a safari supper on Friday night and thought that a couple of puff pastry tarts would work well.

Have found a couple of recipes that look nice, but I haven't made them before. Do I need to know anything beforehand, like don't do this, make sure you do that

Don't think you can go far wrong with puff pastry. (Presume you're buying it). Just make sure you lift it out of the fridge half an hour before rolling out - though it tells you that on the packet anyway.

Thanks, absolutely I'm buying it. I think I made it once at school and vowed never to make it again , such a fiddle

Have found 2 recipes, one red onion and goats cheese, the other olive base with cherry tomatos and mascopone (sp).

I asked a friend about it tonight and she said make sure the base is quite wet to stop it puffing up too much.

I really hope they come out ok, I always get anxious when I'm cooking for the first time and for other people
