Is this Frittata?

i was at a party on saturday.
The buffet was lovely, poached salmon, new potatoes,salad etc and there was this dish that i thought was a pie, but had no pastry, obviously id had a few drinks so cant remember everything about it

im sure it was egg based and had potato and onion and cheese in it, my sister thinks it might have been a frittata.

if so i was wondering if anyone had a recipe for something like that as i would like to make it, im going to have a look on the net as well but i know the MN,ers recipes are usually the best!!!!

Could have been frittata, could have been spanish omelette...! I think the 2 are v. similar

Frittata or tortilla (Spanish omelette). Essentially the same thing.
It's very easy to make.
Boil and slice some potatoes, saute with some onion and peppers of whatever you want to put in it. When browned, add the egg (I usually use 6). When almost set, turn it over or pop under a grill to set/brown the top.
Serve with salad.

Sorry, should have specified more quantities.
Two very large potatoes or three medium ones, one medium/large onion, six/eight eggs. This is just the basic recipe so you can add whatever veg you like.

There's a dead easy recipe on MN Recipes under Lunchboxes, Courgette & Bacon loaf. It's basically a baked frittata but needs no pre-cooking, just mix the ingredients and bake. I was so impressed as I am the lazy type.

Really, really easy fritata.....

olive oil
3 onions
large can new potatoes
6 or 8 eggs depending on size of frying pan
splash of milk
grated cheese
salt, pepper, mixed herbs

Fry the sliced onions until just soft in the olive oil. Add the drained potatoes, beaten eggs and milk, and seasonings.

Cook slowly over a very low heat. When the top is starting to cook, sprinkle on the grated cheese and slide the frying pan under a very hot grill untill the cheese is cooked and crispy.

Cut into wedges with a sharp knife. Eat hot or cold

Frittata is lovely if you start off with very little cubes of raw potato and fry them v gently in olive oil until golden on the outside before adding the egg etc. It takes a while but it tastes great.
