Got family friends coming for dinner Saturday, doing a roast, need a pud that is child friendly and not chocolate. I’m bored to death of making crumble and apple or pear or rhubarb pie

any recs?

cheesecake - baked blackcurrant or basque or an unbaked vanilla one with fruit.

If I'm short of time, I buy a pre-baked, sweet pie case and use it for a multitude or tarts/desserts:
-Passionfruit tart. 1 tin condensed milk, mix in juice of 1-2 lemons or about 2 tablespoons, then add 170g tin of passionfruit pulp or use about 4 passionfruits. Mix and pour into pie case. Depending on the case size, you might have leftover filling which can be cooked separately. Bake the tart at about 160'c till just set and will still be slightly jiggly in the centre. Its firms as it cools. It can burn easily so keep an eye on it.

-Salted caramel tart- Pour 1 tin of caramel into the pie base. Smooth then sprinkle a small amount of salt over the time. Melt milk or dark chocolate and apply a thin layer over the caramel salt. (If you apply it too thick, its tricky to cut.) Refrigerate till the chocolate it solid.

I’d make little pear and ginger puddings with ginger caramel sauce, either cut the pear into cubes and mix through the batter before baking or line individual molds (muffin tin) with thinly sliced pear and fill with the ginger mix before baking.

A lemon posset is also nice and easy, serve with home made shortcake.

My kid friendly go to is lemon tiramisu without the eggs or limoncello. Very simple to make and can be assembled the day before if needed.

Make a simple lemon syrup, cool it down.
Dip the ladyfinger biscuits very briefly in syrup and layer at bottom of dish

Make filling -
Mascarpone
Whipping cream
Lemon curd, lemon juice
Icing sugar
a few drops of vanilla if you want

Layer it up and decorate top with grated zest of lemon, drizzled slightly warmed lemon curd and whatever else you fancy that looks good. I keep a few lemon and orange jelly sweets for added decoration if I can!

This time of year you can make a very quick bread and butter pudding using sliced up and buttered hot cross buns, layered up in a baking dish and pour over a batter made with eggs and milk or eggs and cream. Sprinkle with some Demerara sugar to get a crunchy topping, and bake in the oven until the custard is set.

Sticky toffee, make the day before and pop in the oven while eating roast to reheat. Reheat toffee sauce in microwave, serve with vanilla ice cream. What time shall I arrive?

Oh mumsnet you do know how to deliver! I actually have a fab Bosh sticky toffee pud u haven’t done in a while so thanks for the reminder, though bread and butter pud with croissants is also calling me!!!

@crasenda, how simple is your simple lemon syrup? I’d love to make one but my hands are a bit arthritically swollen at the moment. Help me!

Although ime some children (mine, even as adults) refuse to eat it.

If that's difficult for you with your poor swollen hands, then do what I do in an emergency (yikes I've no lemons!) - I use Monin lemon syrup, water, a teaspoon of icing sugar in a pan and follow the heating up method above. No lemons, grated or juice needed! It's fine for Tiramisu, but you could add some juice if you want it more tart.

I would look up 'self-saucing pudding' recipes (so many flavours and so easy to make) then serve with Jude's or HD vanilla ice-cream on the side.

Your Bosh! sticky toffee sounds fabulous, but in my family some of the children find the flavour of STP too strong. So I'd have some bananas and a small punnet of raspberries on hand as well to go with just ice-cream. For the Sticky Toffee Refusers! Maybe some store cupboard caramel sauce too? No waste as all could be used for something else if not needed.

Check out Nigella’s clementines cake. It takes a while but is dead simple, is better after a couple of days so you can make it well in advance. It’s more puddingy than cakey and great with cream or ice cream.

Thank you, that’s perfect. I’ll get OH to do the lemon zesting as it’s his unusually dry cake from yesterday we need to rescue! And also thanks for the tip about Monin lemon syrup.

Poach some plums and put them (with syrup) into a deep dish. Cover with meringue and into the oven until golden.

When you put a spoon into it, the pink syrup spills over the golden meringue and looks so lush.
