No meringue, so.

Make a rice pudding with good zested lemon in it. Can make ahead.

Butter a deep dish, separate two eggs. Whisk the yolks a bit and stir through.

Whisk the whites to soft peaks and fold through. Bake in a tray of water until risen, light, fluffy and golden.

serve with your favourite poached fruit.

No idea how I managed to do a double post above- then somehow have 2, different food pics on show? 🤷‍♀️

They were worth posting twice! Where do you get passion fruit pulp? It’s not something I’ve seen before.

I found these tins lurking in my cupboard and I think I got them from Lidl during their South American or maybe Caribbean week one time?
John west do it, but I can only see that from amazon/ebay.

Whilst looking I found this from M&S but haven't tried it. You can sieve out the seeds too if you don't like the crunch.

Jam roly poly, hot custard, perfect

Mandarin jelly & ice cream.

AutumnedCrow · 18/02/2026 16:12

I’ve actually been reduced to McVitie’s ginger cake and an Asda carton of custard before now when my hands were hurting a lot. Absolutely bland and awful.

When I was a student, I used to have warmed up ginger cake with golden syrup and stem ginger plus a dollop of ice cream. Delicious!

Clefutis is shockingly easy and delicious. Somewhere between baked custard/ suffle and frangipan. I use the BBC good food recipe but double up. Use frozen mixed berries in the bottom. I slightly undercook and you end up with a hot almond custard type sauce in the middle. Divine!!

Second is raspberry and lime curd pavlova. Bake the range beforehand, the. All you need to do is whip cream for the top. Drizzle with lime curd (or a decent shop bought lemon curd) and scatter with raspberries.

Apple and cinnamon cake (Mary berry)
eton mess
banoffee pie
carrot cake
classic Victoria sponge
Apple strudel - custard and cream

NewAgeNewMe · 18/02/2026 22:18

syrup sponge pudding cooked in the microwave
or my easy favourite currently, is ready made puff pastry covered with grated/sliced marzipan with thinly sliced apples or plums on top. Baked in oven for 15-20 minutes. It’s
sweet but hits the spot and is 5 minutes to make put together.

RosesAndHellebores · 18/02/2026 22:20

My go to which people love is: fresh strawberries, the best vanilla ice-cream you can find and cadburys flake.

Another is a plain old creme brulee or home made lemon meringue pie.

Or go the hog and make a steamed pudding and serve with custard or a mille feuille.

Emmz1510 · 18/02/2026 22:26

Can’t beat a cheesecake. I prefer no bake, which is even easier.
Or maybe lemon meringue pie? I make it with a crushed biscuit base rather than shortcrust pastry. Not sure about child friendly but my daughter loves it and she is very fussy with desserts.

Something we are loving at the moment but might be too simple for a dinner party is hot cross buns toasted and used to make an icecream sandwich - add a drizzle of golden syrup or some curd and simply delicious

You are a genius. This sounds incredible.

Nooooo, seriously, a cheesecake without a buttery biscuit base?

Edited: sorry I misread. You said without bake

RemusLupinsBiggestGroupie · 19/02/2026 09:58

And it’s made me remember one of my favourite things- not for serving to guests though, probably!

2 cooked little Yorkshire puds, cold. Put a teaspoon of jam in the cavity of each, plus a tablespoon of milk each. Microwave them. Delicious!

Gonnagetgoingreturnsagain · 19/02/2026 10:20

Here’s one. Get pack of ginger biscuits soak in liqueur, whip double cream spread all over, then put in fridge. Slice diagonally when serving.

My mum used to make this way back in the 70s and I remember it very fondly. I think she probably used sherry.

MissBattleaxe · 19/02/2026 11:27

A friend of mine was cooking for a crowd and did a huge bowl of Eton mess. Bought meringues, fresh strawberries and double cream. Big dollop for everyone. Easy, lots of it and no baking. It was a massive hit.

Blueuggboots · 19/02/2026 11:27

Ice cream of different flavours, toffee and strawberry sauce and a selection of fruit and toppings.

I’ve made it with whiskey. In the 80’s.
