Chopped tomatoes, onion and garlic, splash of lemon juice and some herbs, and maybe a splash of wine and cream would be my option

There are two types of tomato based sauces I make with prawns.

1st one is best if you also have some rocket. Saute a bunch of chopped garlic in some olive oil. Add a tin of chopped tomatoes and season with salt and pepper and simmer down to reduce (about 20 mins). Whisk in some milk or cream to form a pink sauce. Meanwhile, cook spaghetti. When spaghetti is few minutes from being done, add prawns to the sauce. Drain spaghetti and combine with the sauce, adding a bunch of rocket as you do. The rocket will wilt with the heat of the other ingredients. This is a staple here at my house.

Another way is to chop an onion and saute in olive oil til soft. Then add a tin of tomatoes and a glass of wine (red or white will do) and seasoning. Simmer down to cook off the alchohol. Cook the spagetti and when a few minutes before finishing, add the prawns to the sauce to cook/heat. You can also add some fresh herbs such as parsley or basil. Combine when spaghetti is done.

lemon juice, olive oil, cracked black pepper and a little sea salt.

saute the prawns in olive oil, mix some more with the lemon juice, more olive oil, pepper and a bit of salt.

toss it all with the spag.

Ooooh - have just defrosted prawns for tea and that sounds much more exciting than the salad I'd planned......off to check we have the ingredients.........

.........we do, except for cream. Would fromage frais do instead?

pinkspottywellies · 14/06/2008 18:40

I'm sure fromage frais would be fine if it's normally ok to heat - I don't really use it so not sure!

I'm going to chance it - any creamy sauce with a splash of wine is always good (fingers crossed). Thank you for the idea! Inspired indeed.

psw - you are a genius! that was devine and dh really liked the subtle hint of chilli. My new favourite dish for king prawns and v low in fat with the fromage frais! (desperately trying to negate the McDonalds lunch we were talked into by the dc!)
