Do you think ground ginger would work in place of the fresh ginger? It does sound lovely.
If I do a traybake, do I send it to school in one piece or sliced?

Ground ginger should be ok - best to check other gingerbread recipes for quantities. However, if you do get a chance, this time or another, to use fresh ginger, then do, because the flavour really is amazing. I'd cut slices, tbh - makes for a bit less work at the other end.

I tend to do a bog standard chocolate traybake iced with shop bought icing because it's quicker and I'm always making these things last minute the night before. IME as long as you decorate it with something the kids like (I usually use choc buttons; sometimes a mixture of white and milk choc, sometimes the giant choc buttons), they'll be snapped up. But I realise that I'm not really one of those people who liked baking, and it sounds as if you are.
