Recipe from What Not to Eat last night?

Did anyone catch the recipe for the pasta that Tim Spector made last night on What Not to Eat? It looked really nice and we're trying to eat healthier, we have a habit of resorting to processed food due to lack of ideas.

I think it was a paste of walnuts, broccoli and olive oil (maybe Parmesan too?) with orichietti.

Doesn't look that simple to me. Nut crumb and boosting Bouillon are both ingredients I'd have a hard time finding. Plus only two minutes of cooking of the broccoli wouldn't be enough for me. I'm interested in trying it though, hoping it can be done with a stick blender rather than a food processor.

My hunch is that the recipe was taken from a book which explains how to make or where to buy the Boosting Bouillon and the Nut Crumb and what a top up is (protein boost?). I would be ignoring all of that and sticking to the ingredients I recognise and can easily buy. I tend to use recipes more as a starting point than something I have to follow religiously, so if I felt the broccoli needed more cooking that's what I'd do.

I guess you can just whizz up some nuts for the crumb, then add seeds?
Says you can swap out parmesan for the bouillon

You don’t buy it; you make it. If you google Boosting Bouillon Tim Spector you’ll see it’s basically sunflower seeds, chilli flakes, nutritional yeast whizzed up together. Use instead of stock cubes.

(But no, I don’t know where to get nutritional yeast!)

This is a basic but delicious recipe. Pasta and veg plus a variation on pesto.

I agree. Personally I’d add a bit of garlic and lemon zest/juice, and some chilli. Plus a couple of roasted red peppers if I can be bothered.

I don't know if you can get it in supermarkets but any wholefood shop would stock it. We have a chemist not too far away which fills half the shop with health foods and wholefoods, and they have it. Holland and Barrett probably have it too. I believe it's a vegan staple so probably a lot easier to come by than it used to be.

I know I can get it in health food shops, but not in my local supermarket.

Sainsbury's and ASDA here sell nutritional yeast. Holland and Barrett sell it presumably nationally

Nut crumb is just a mix of nuts and seeds blended to a crumble texture. Very easy.
Nutritional yeast is just dried yeast flakes. Available lots of places and widely used in vegan food for a cheese like taste. It is a one ingredient food and high in protein and fibre.

If these ingredients aren't in the supermarkets then that points to a problem with the supermarkets prioritising junk.

I know this priority is likely based on what sells but hopefully initiatives like this (and dietary changes that have come from incretin hormone analogue treatments) will change the balance.

Which of these are not stocked in your local supermarket? Nothing has to be cooked in advance. They whole recipe takes 15-20 minutes.

  • 3½ oz / 100g orecchiette
  • 1 cup / 150g cherry tomatoes
  • ¾ cup / 80g walnut pieces
  • 2 tbsp Boosting Bouillon or nutritional yeast
  • 1 large head broccoli (12 oz / 350g), cut into small florets
  • Salt and black pepper
  • Top-up: Nut Crumb
  • Swap: Parmesan can be used instead of Boosting Bouillon

It says clearly that you can use Parmesan instead of boosting bouillon. I’m sure ordinary bouillon or stock would work as well. There can’t be many supermarkets that don’t stock nuts or yeast.

Nut crumb is chopped/crushed nuts - you can buy nuts anywhere and crush them yourself.

Nutritional yeast is sold in Asda, Sainsbury’s, Tesco, just to name a few.

Ditto bouillon.

Nut crumb was listed in the ingredients as if you could buy it as it is. I'm not in the UK and here I've only ever seen nutritional yeast in health food shops. Even when I lived in the UK, I don't remember seeing it in the supermarkets. Maybe it's in the larger ones that were far away from me.
I just think that if health programmes are going to get people eating healthier, it would be better if they had easy and common ingredients.
