Sourdough bread starter - what am I doing wrong (more constructuve advice than the obvious answer, "everything", please)

I'm going through one of my intense "wafty" phases when, for some reason, it is very important to me to make my own sourdough bread. I have been trying to make a starter (am reasonably good at making bread - usually make a loaf by hand at the weekends).

Now I have tried three separate recipes, two of which has been totally disasterous. Tonight ("Day4 - end of phase 1") I am going to have to take a view on the third. It just doesn't look right .

I'm supposed to put in in a "tight lidded large class container and keep in it the fridge" from tonight onwards, but it is all separated out and has a bit of a crusty top (from the "piece of muslin or cheescloth" covering it for the last four days.

Aaargh! Anyone got any views or recipes on how to do this?
