HELP!!!...I said i'd make it this weekend for a family BBQ and I can't for the life of me find the recipe. It's quite an old one, about 3 years ago i think. It's not on the web (not that i can find) so I'm hoping someone out there is a fan of it too and has the recipe.

Big TIA xx

Dizzy's recipe looks right, sour cream instead of thickened cream , no lemon rind either.

This is the actual pamapered chef version that I use at shows.

BRIOCHE BERRY PUDDING

1 packet 10 mini brioche or 1 brioche loaf
150g/5½oz white chocolate, chopped
300g/10½oz fresh or frozen raspberries
55g/2oz caster sugar
1 tbsp plain flour
500ml/18 fl oz sour cream or crème fraiche (half fat if desired!)
3 eggs
½ tsp vanilla essence
2 tbsp icing sugar

Preheat oven to 200ï‚°C/400ï‚°F/gas mark 6.

  1. Cut waffles into 2.5 cm pieces. Coarsely chop chocolate. Place half of waffles in Deep Dish Baker. Sprinkle with half of chopped white chocolate and half of raspberries. Repeat layers.
  1. Place Baker in microwave oven for 3 minutes on high if using frozen raspberries.
  1. Combine caster sugar and flour in Classic Batter Bowl. Whisk together sour cream/crème fraiche, eggs and vanilla essence. Pour evenly over top of raspberries.
  1. Bake for 30 minutes or until golden brown and set in centre. Cool 10 minutes. Sprinkle with icing sugar. Serve with cream or ice cream if desired.

Does anyone know if this is the same recipe used in the Come Dine with Me television programme by Ron from Middlesbrough? I've been trying to find it on the web because it sounds delicious and on the show seemed an easy cook recipe?

ThatsNotMyRabbit · 16/11/2015 12:35

Ah. Waffle berry pud!

My DHs favourite!

I can never remember the exact recipe but it's fairly forgiving.

Bought, sweet waffles. Layered with tinned winter berries and (probably far more than the original recipe recommended) squares of white choc. With eggy custardy/Creme fraichey mixture poured over. Lovely.
