Any good recipes for Pork Fillet ??

I bought this but, apart from just roasting it I am not sure what to do with it.

Any suggestions ??

Rosemary pork and beans.

Fry onion, add garlic, add diced pork, add tin of tomatoes, add fresh or dried rosemary, add drained tin of cannelini/borlotti/butter/haricot beans and simmer and reduce slightly until pork cooked. Delicious

Both sound great - shall have to try them both now! A good enough reason to buy more.

if you're using medallions can I suggest very simply grill them, cover top in apple sauce and cheddar and melt under grill - very basic, very plain but also lovely

MArinade with garlic and crushed chili flakes and then roast. Also as Cod's suggestion but add whole grain mustard.
