Green lentils

I have 2 tins sitting in the cupboard feeling sorry for themselves- they were an impulse buy.

What can I make out of them?

Sorry emma, I don't have a clue about lentils..but I would appreciate some advice here.

I whack a tin of green lentils into sausage casserole.

Also good in curries.

DD2 loves a curry made with vege, green lentils and garnished with sliced hard boiled eggs. I must admit (sorry because on a lentil thread this is clearly not lentil weavery)I sometimes cheat and use a jar of Lloyd Grossman's balti sauce for this

i add them to spag bol and cottage pie, my DCs dont notice them at all!

my favourite is a carb-loaded Egyptian dish called Kosheri. Hang on, will find the recipe.

Cook some short grain rice with a tbsp of ghee (Egyptians love the stuff, I leave it out)
Also cook some macaroni or other small pasta shapes
Make up a tomato sauce with onion, garlic and a tin of tomatoes, lots of pepper, 1 tspn sugar.

Finely slice some onions and cook them gently in veg. oil until really crispy and cooked but not burnt (I always burn them )

Now, serve! Pile some rice onto each plate, then the macaroni on top, then the tomato cause and then the lentils. Sprinkle with the fried onions and shake a bottle of tobasco sauce over the top.

Absolutely delicious, always reminds me of my childhood. Lovely carby comfort food.

Looks like I'm not the only one to get carried away in the presence of tinned pulses in the supermarket.
