Aubergine curry - need some help

I have an aubergine and I want curry for supper. So thought I'd curry my aubergine.

I don't have yogurt of coconut milk. I do have a variety of spices like:

  • fresh ginger and garlic
  • ginger and chilli paste
  • garam masala and curry powder
  • cumin (ground and whole)
  • ground coriander
  • cardamon I think

Also have tins of tomatoes, fresh tomatoes, potatoes, red lentils, chickpeas.

Help me cobble something together please that will be yum. Ta

Take some oil, fry some garlic and ginger in it. Then add some cumin seeds and mustard seeds (if u have them).Add chopped canned tomatoes and fry for few mins. Add Salt, Chilli powder, tumeric powder, Coriander powder and cumin powder. Fry again till oil separates. Add aubgergines cut into round slices and cover and cook till they are tender. Add water if u need but avoid it if possible. In the end put hald a teaspoon garam masala powder and cook for 4-5 min. Then its ready. Hope you like it. You can add fress green chillies if u like spicy food. You can also garnish with chopped fresh coriander if you have and little bit lemon juice.

I would make a vegetable and lentil curry with aubergine as on it's own it won't go very far ime.
So sautee chopped onions, garlic and ginger in a little oil. Add spices and saute a bit more, add vegetables(cubed aubergines, peppers ect) and lentils, sautee a bit more. Add tin of tomatoes and some stock to cover. Bring to the boil and then simmer for at least 30 minutes not forgetting to season.

Thanks ladies. I actually made this last night. MAnage to fudge my way through. Was ok, not brilliant. BUt thanks anyway, will save your tips for next time
