At the moment I am mostly recommending Anjum Anand's Indian Food Made Easy to everyone - Its fab!

Also any Nigel Slater book!

Nigel Slater here too, I use Nigella's How to Eat quite a lot too. I hate to say though that my most used recipe book is Annabel Karmel's Favourite Family Recipes

Peckish but Poor by same woman who wrote 'Grub on a Grant' Lots of great, easy recipies made from normal ingredients, many of which you've got lying in your cupboard anyway. Here's an example and we had it for dinner last night - Courgette & Nut Roast

1lb of courgettes grated
8oz of mixed nuts chopped
1 onion chopped
1 red pepper chopped
1 tbps of pesto
2 beaten egs
4oz of breadcrumbs

Mix the lot up in a bowl and then fling it in a shallowish oven proof dish at 190C for 40 mins. Delicious, especially with tomato chutney and salad

Rick Bayless' Mexican Kitchen.
I love Mexican fod, and dh is from Mexico and it's nice to say that with these recipes it's as good as his mom's cooking because she is a goddess in the kitchen.
