Because I have a vegetarian coming to visit next weekend and would like to cook something along the risotto or pasta lines that is meat free but interesting.
No quorn/tofu please as I find them screamingly indigestible.

pasta and peppers with coriander

thinly slice a red pepper and a yellow pepper, and gently pan fry them in plenty of olive oil till they are soft and slightly browned at the edges

cook enough penne or rigatoni pasta for up to 4 people

when the peppers are ready, season them with plenty of black pepper, some salt and a generous handfull of chopped fresh coriander

mix peppers and pasta together, with all the olive oil that the peppers were fried in and serve with lots of freshly grated parmesan

A risotto I do for vegetarians is: fry the chopped onion and garlic in butter, add the rice, then vermouth, add some chopped deseeded tomatoes and saffron threads, carry on as normal with the stock, then 5-10 mins before the end throw in some chopped asparagus or sugar snaps for a bit of crunchy bite. Or instead of putting the tomatoes in early, throw in cherry tomatoes a little later, and they will gently ooze tomato-y goodness at the point of serving.
