Spinach ideas?

Have just got the veg box and there is a huge mass of spinach in it! Any ideas for so much?

Spinach and ricotta lasagne/cannelloni (very quick and easy, fry an onion, mix the chopped spinach with the ricotta and onion, season, layer into dish, top with a strong/mature cheese, bake)

Spinach, rocket and cream sauce for pasta (nicest with wholemeal)

A quiche or tart?

A huge mass of spinach soon dwindles to nothing when cooked!

You could make creamed spinach. Fry a little onion and garlic, add spinach, cook until wilted, add 1/2 pint of cream and handful of cheese... delicious! Not good if you are on any kind of diet though!

I will look for other recipes!

It's nice just as a salad. I'd most likely stir fry or chuck in an omelette.

Great in a fish pie, salad (warm or cold, as a side dish creamed or wilted and sprinkled with nutmeg, as an Indian spiced dish. Love spinach.

Spinach and bulgar wheat. Cook the bulgar wheat in some good stock. Fry up an onion with some garlic, add spinch - wilt down and then add to bulgar wheat - yum yum

I stir it into curry at the end of cooking (or any tomato sauce based casserole). The huge mass will shrink to next to nothing when cooked.

i make saag aloo. i cant find my recipe though but im sure if you google it there will be one somewhere. i use a recipe from weight watchers cook at home if you know any one with the book i also put it in fish pie and use in sarnies with rocket. dd1 is strange and loves eating spincahe just on its own.

chicken breast with spinache and cheese mash, quite self explanatory, i use philly or diarylea as the cheese for the mash and chop the spinache really small, i put it raw as spinache can go all gloopy if it is cooked for too long.

I am used to cooking with spinach but this really is an enormous amount! Think I may go for the curry. Forgot to mention I can't have much fat so cheese and cream are out

If you want to use it in various different things, you could add some to a normal lasagne - place it on top of the meat layer. Adds a little je ne sais quoi!
