I'm fining it hard to think of scrummy, exciting and healthy meals in the evening.
D and I are trying to shed a few pounds but I'm not used to cooking without cream, olice oil, cheese, butter, potatoes, pasta etc.
So if you have low fat and / or no carb recipes please be kind enought o share them with me, at least until I have the chance to buy some low fat / low carbs cook books.
Thanks - TC x

No recipes but ALDI are doing some of the new low carb pasta and sauces etc at the moment. Think they are by colmans. Much cheaper than other places.

teriyaki salmon
roast salmon fillets in tinfoil with some shop bought teriyaki sauce and some crushed ginger, garlic, chopped spring onions, chilli and soy sauce for 12 mins in hot oven. Steam lots of broccoli and green beans with some chopped leek for 6 mins. Serve the salmon on top of veggies. Actually much much yummier than it sounds - we have it at least twice a week when were being careful about things..

I think you've got Fat Girl Slim now but Nigella's salmon is fab, will see if I can find the recipe, posted it here somewhere long ago.

weightwatchingwaterwitch · 31/01/2005 20:45

Found it!

"Also you could do Nigella's salmon on a bbq: (from memory, but pretty sure this is right) make a mix of a teaspoon each of cayenne, ginger, sugar, salt, cumin, mustard powder and cinnamon and coat the salmon with it. Cook salmon and make a sauce with a teaspoon of mustard (she says Colmans but I've done it with Dijon as it's not so hot), tsp hot water and tsp of sugar. Delicious and a low fat way to cook salmon."

Do you like soup?

Broccoli and Cauliflower soup- 2 heads broc, one cauliflower, one leek, veg stock, water. I do this in the pressure cooker for about 5 mins, leave to cool then pop in blender with handful of basil leaves. Whizz away then add pepper/salt as required(I don't use salt)Lovely and thick and creamy and filling. Had this a lot last week and lost 4 lbs.

Or mushroom soup

Leek, garlic, mushrooms, veg stock all in pressure cooker for about 4mins, then whizz away.

If don't have pressure cooker then simmer for about 20 mins in pot.

I like soup as it's really filling and satisfying on cold nights.
Good luck
