Have some lamb - what to make?

I have a few organic lamp chops to use up for Dh and DD this evening. They are defrosted so need using today really.

Not got loads of stuff in as online shop is coming later on tonight - but too late for dinner today.

What can I serve up?

You could pan fry them with garlic & rosemary

Serve with new potatoes, green beans and broccoli

Hmmm - none of that veg in.

I have, in terms of veg,:

a few big potatoes,
handful of baby carrots,
a bit of broccoli,
some tomotoes,
quarter of cucumber,
half a yellow pepper,
some frozen sweetcorn,
some frozen peas,
and then tinned baked beans

I have a whole range of dried herbs and spices, and various sauces, etc in the cupboard.

Lamb chop stew. Brown off your chops, make up some stock, cut up your potatoes and other veg and chuck everything in.
