My elderly neighbour says she's running out of ideas for cooking meals. Basically, the eat meat and veg, potatoes and rice. She's been asking me about what she can do with mince/chicken etc, but tbh we eat quite a lot of spicy food, like chilli, which they wouldn't like.

does anyone have any plain, simple recipes that I could give her? Obviously she does the traditional stuff like shepherd's pie etc already. Thank you!

DP does a Peruvian rice dish where he makes mince with raisins in it, tomatoes etc and then he lines a bowl with cooked rice and fills the middle with mince. Then he turns it upside down onto a plate, and garnishes with chopped parsley, so you get a sort of rice igloo stuffed with mince. It somehow tastes all the better for being pretty!

He also does chicken, tomatoes and onions all cut in long chunky strips and stir fried, then served with chips which have been cooked seperatley and then added to stir fry near the end, very juicy and yummy. Can also be done with beef.

Don't they eat pasta?

Chicken, veg and rice goes down well here.

Chop up a couple of chicken breasts and fry in a little oil.

Chop some veg (anything you like). We use peppers, onions, carrots, mushrooms etc. Add to chicken and cook until softened and going brown at the edges. Season with some black pepper.

Make up a pint of stock with a chicken or veg stock cube, or fresh stock if you happen to have any. Add to the chicken and veg. Thicken with cornflour and cook for a further 10 or 15 minutes (as long as it takes to boil up some rice).

Drain and rinse rice and serve with chicken and veg sauce.

Mince curry (mild) with tinned tomatoes - this is MUCH nicer than it sounds

Potato gratin.

Paella

Persuade her to add some cheese to her diet instead of meat, or some fish or prawns. It can make a really nice change.
