May have been done before BUT does dried food really go off or should I throw it?

I have a large collection of pasta, rice, italian biscuits, brushetta ect, some are out of date by a month or two. As they are dried would they make me ill if I ate? Jam shouldn't go out of date either should it? or pickled onions? Is there a limit how long stuff like this really lasts or are the supermarkets after all my pennies again?

Jam is the only thing I would be worried about ... mould. I would take the risk and live on cheesey pasta until it has all ran out, go for it.
