Need ideas for what to do with Jerusalem Artichokes

Last time I got Jersusalem Artichokes in my veg box it took me days of research to even figure out what they were!

I made soup that time but does anyone have any alternative suggestions?

they can be roasted like you would with other root vegetables like carrots, parsnips, celeriac etc.

thanks! roasted sounds like a good idea. My baby is quite windy so if necessary I can blame her...

I wasn't v successful when I tried roasting them as they didn't crispen up well ata ll. I usually do Delia's soup - in the veggie or winter cookbook. Can't remember the recipe off hand but v easy & tasty.

Nigel Slater had a recipe- you roast them with olive oil and butter, lemon zest, thyme. Very nice. Otherwise soup!
