Writing in icing - how best done?

maggiethecat · 22/05/2008 22:43

I tried this recently, mixing some royal icing with water and expected that if it was thick enough I could use it in an icing tube but it was too runny.

Is there a trick to this, eg leaving it a bit to thicken up or is writing best achieved using butter icing? (have no clue, will have to look up recipe)

Grateful for any tips

I think iirc that it needs to be pretty thick to be able to squeeze it out to form consistant letters.

more icing sugar and you have to lift the bag up as you write

I find it easier to write with melted chocolate, either way practice on greaseproof paper for a while before you attack the cake
