Calling cake experts..why do my fairy cakes go pointy in the middle?!

I always thought I was doing mine wrong because they don't peak. Peaky ones always look so nice.

Mine peak but then collapse a bit on cooling (following the Nigella recipe) - this doesn't happen (ie they peak and stay peaked) if I add cocoa to make choccy ones, so I don't know if there's enough flour in the original recipe iykwim...

Nige does advise you to cut the peaks off, however, so she obviously has this problem herself!

My batch of cupcakes I made this week, the outer cakes were peaky and the middle 2 were like souffle, I cut the tops off and frosted them, the tops tasted lovely, lol, will not over mix, lower temp and not overfill, thankyou xx
