does it have to be meringue or is there anything else i can do? Can i freeze them?

You can freeze egg whites.

Place singly or in pairs in clean, small plastic containers with lids. Alternatively you can use ice cube trays. Freeze the whites in the trays and once frozen tup out into a polythene bag, remove the air, seal and label. Return to freezer. Note how many cubes make up 1 egg white so you will know how many to remove when ready to use.

Storage time - 6 months.

Thaw in fridge for several hours or at room temp for 1-2 hours Use as for fresh eggs.

My DH bought me a book called How To Freeze when mine were really small and I never knew whether I could freeze certain foods.

1 egg white is approx 40 - 50g - so you can weigh a bag of whites to approximate the number. Ours can look like a sperm bank at times - all the lovely ice cream then have pavolova fests or the one with ground almonds in it
