salad ideas please

Ok so I am on a salad diet! I usually just do letticue (homegrown), toms and cucumber with abit of ham or eggs and olive oil. Can anyone give some some yummy ideas please? Thanks

my fave is a 'greekish' salad!!

I have am amzing greek salad by Nigella \link{http://community.cookinglight.com/showthread.php?t=36533\greek salad] which is possibly THE best salad EVER (although I loose half the feta!!)

I also do a 'greekish' version

Basically finely slice 1/2 red onion, 200 g nice tomatos, 1/2 cucumber, crunble over feta, splash over red wine vinegar and virgin olive oil and mix, bung in olives!!

I then add stuff as I fancy, green beans lightly cooked ae fab in this, cos lettuce is good too, red pepers are OK

It is the combo of crumbled feta, olives, redwine vinegar and red onion that works

Salads are made much better by a bit of fried pancetta, ime. Or avocado. Or wet mozzarella. You need a bit of protein and fat.

Nice salad number one:

Grate some carrots and some beetroot. Mix together and add a small handful of raisins. Toast a tbsp of sunfloer seeds and mix in. Dress with soy sauce, lemon joice, a pinch of cinnamon and some balsamic vinegar.

Nice salad number two (aka tabbouleh):

3oz bulghar wheat, soaked in cold water for i hr and drained. Mix this with a bunch of finely chopped parsley (you need lots), two diced tomatoes, half a diced cucumber, some chopped spring onions and s little chopped mint. Dress with the juice of 1 lemon and some olive oil. Season with salt and pepper.

Nice salad number three:

Cook small chunks of butternut squash until tender. Cool. Soak some couscous in boiling water until cooked. Combine the couscous and squash, and add, in any quantity: chickpeas, tomatoes, cucumber, peppers, spring onions, lots of fresh corinader and parsley. Dress with a dressing of lemon jiuce, honey, olive oil, a pinch of cinamon, a pinch of cumin, some mustard and salt and pepper.
