I am sooooo bored of everything I cook just lately. BUT we all like pasta - so please would you all share your favourite no meat/no fish pasta recipes in order to give the Janeite family a little variety?

Currently we like - veggie spag bol / arrabiatta / dp and I like mushrooms and garlic cooked in brandy and creme fraiche / veggie lasagne.

stir fried thinly sliced carrots, caurgettes, broccoli, onion, chillie, ginger and garlic with a sauce made from 2 tspn cornflour, 2 tbsp soy sauce, one cup of water, a little honey and a handful of chopped coriander. Best served with tagliatelle or pasta shells.

sauteed courgettes and onions with garlic, slow cooked with a carton of tomato passata till nice and thick.Served with lotd of grated cheese.

pasta bake - part cook pasta, shove in ovenproof dish with cream / milk (cooks quicker if this is hot) and veggies such as broccoli, sweetcorn, chickpeas - whatever you have lying around. Sprinkle with cheese and bung in oven until cooked.

chery tomatos gently warmed though in a fryinmg pan

Cook pasta shapes to packet instruction and drain

Add cherry tomato, a dollap of creme fraich and a good helping spoon full of pesto

Serve with grated cheese on top and black pepper

ps add sweetcorn if you like to the pasta whilst it is cooking - 3 mins from the end of cooking time

lots and lots of thinly sliced red onions sauteed in olive oil and garlic and a tspn of sugar until lovely and soft and caramelised. Add soy sauce, chicken/veg stock and enough water mixed with a bit of cornflour to make a gravy. Add lots of freshly milled black pepper and salt and some worcestershire sauce. I do it with finely chopped bacon too sometimes but it's equally as nice without.

Again this is best served with tagliatelle but also good with spaghetti, all mixed in, and garlic bread and a salad.

chunks of halloumi cheese, cherry tomatoes,baby spinach leaves and black olives tossed ina nice salad dressing and mixed into warm pasta shapes is also delicious. One of DS's favourites.

Saute some garlic in butter. Use a potato peeler to cut a couple or courgettes into ribbons and cook them with the garlic for a few minutes. Blend into a puree, pour in some double cream and then grate in a good amount of parmesan cheese. Then stir through the pasta.

Gently brown an onion and 2 garlic cloves
Add a Tin of chopped tomatoes.
Add a few chopped spring onions
Half a tub of mascapone cheese, stir until melted into sauce.
Half a bag of spinach (a handful at a time and stir in until wilted, then add next handful)
teaspoon of nutmeg
salt/pepper to taste.

Add to pasta of your choice, and sprinkle grated cheese on top.

Yummy - even ds eats it!

Sometimes we vary the veg, or add prawns/chicken etc

fry up onion, mushroom and garlic, add spinach leaves and a handful of pine nuts. pour in double cream (a couple of table spoons or the whole tub if you are my dh)

serve with spaghetti

Blitz together a couple of good handsfull of basil, a handful of pine nuts, a clove of garlic or two and 4 - 6 tbs of olive oil. Stir in a good wodge of grated parmesan (veggie version). Really good pesto.

4 or 5 peppers chopped, a few tomatoes skinned and chopped, 2 garlic cloves crushed, put them all in a roasting tin, drizzle with plenty of olive oil, oregano (dried works well), season, and pop in the oven for 40 - 50 mins at 190c. Pop in the blender till smooth. Very simple, very delicious.

A base tomato sauce (you prob already have your own, I tent to saute onion, then add peppers, then garlic, bit of smoked paprika, red wine & puree, followed by tins of tomato (usually add 4 tins to freeze some), then vary extras:
mushroom, peppers and courgette
spinach and mozzarella
veggie sausages

or pesto with some creme fraiche and roasted peppers

cherry tomatoes, garlic, spinach and toasted pine nuts

leek with roasted butternut squash and roasted peppers in a cheese sauce to make lasagne

spaghetti with cheese sauce and mushroom

slice courgettes really thinly, saute until mush with garlic and lemon juice, mix with spag and parmesan

Brilliant - ooh I especially like the sound of leek and butternut squash, as both girls love those.

Red and yellow peppers, sliced thinly (probably 1-2 per person, depending on the size/your appetite), an onion, sliced thinly and as much garlic as you like. All slowly pan fried in lots of olive oil till soft and caramelising. Season with salt and black pepper.

Just before serving, chuck in a large handful of fresh coriander.

Serve with penne/rigatoni, and lots of fresh parmesan.
