fajitas - recipes please

I love fajitas and the shop bought ones are horrible. Has anyone got a good recipe that's not too fiddly.

I just dice chicken, fry it in lemon juice with onions and add some soy sauce, a bit of garlic and a tiny bit of paprika and a little chilli powder (a pinch, no more than that).
Wrap it all in a tortilla with salsa or mayo.(I prefer mayo, dp prefers salsa)

I used to use a recipe for the spice mix, but it tasted too weird so just use fajita spice mix (in one of those little spice jars) fry chicken/mince with onions and green and red peppers and spice, wrap in tortilla with sour cream (doritos jar is yum) and salsa. It's so easy.

For a slight variation on the norm, DH cooks his chicken in butter, then adds a little flour and curry powder. Very tasty! (however he's a "fussy" eater and adds baked beans in his tortilla?!)

defn fry onions & (red/yellow) peppers as well as the chicken.
We add lettace, cheese & as many mexican dips as we can fit in - sour cream, guacamole, salsa...

DH's (unauthentic) marinade includes worcester sauce & garlic as well as the chilli pinch.

I usually use chicken, but recently, after finding some decent rump steak in the cheapy chiller, I chopped that up into very thin strips and cooked that quickly in wok, threw in some red/yellow peppers sliced up, sprinkled over some fajitas seasoning and it was great!

too late now but :

chicken
lime
pepper
chili flakes
oregano
lime zest
lime juice
olive oil

mix, leave to marinade for a while (covered in the fridge), cook in hot pan, eat with sour cream and salsa...

..Ainsleys recipe but we've had it so many times it feels like ours..

probably don't need lime twice though... ..just the zest and juice.

Don't forget to season..
