Sunday dinner that isn't a roast

I need some inspiration! We usually have a roast of one sort or another, or sometimes branch out int chicken portions, chops, a casserole or a steak pie, but I am fresh out of ideas...

Does anyone have any suggestions please? For 3 adults & we eat most things.

I cook this all the time , it's a simpler version of b the whole chicken and rice dish posted up thread . It does make a large quantity of rice and I've scaled it down to 143 rice and 2 1/2 times liquid or 356ml.

Our friend does sweet chilli chicken and salads . 4 chopped chicken breasts in breadcrumbs ,then coat in sweet chilli sauce.Fry for half hour/ 45 mins until juices run clean. Makes pasta salad.pomegranates ,salads and crusty bread .I do a cheats lasagne ,Fresh pasta sheets and a white sauce .Do mince and onions /mushrooms in slow cooker cook early morning .Just assemble and go!

Moussaka - I always use Delia Smith's original 1970s recipe from my much-thumbed copy of The Complete Cookery Course, but sometimes I add courgettes and/or potatoes as well as aubergines. I won't link the one currently on her site because she's changed the topping from a thick egg-enriched bechamel sauce with lots of cheese in it to one involving ricotta. @madaffodil - I lived in New Jersey for many years where many Italian Americans live. All the Italian families I knew loved to have ‘Sunday Gravy’ which is a rich tomato sauce slow cooked with meatballs, sausages and or any cut of pork eg. Chops, loin, pork bones or you could use beef eg. Stewing meat or braising steak. Minimal preparation and although it is usually simmered on the hob I guess you could cook it in a slow cooker if you have one.

It’s easy to adapt for extra people. Serve with pasta eg. Penne and bread/garlic bread. Maybe serve with some green vegetables too.

Italian Sunday Gravy (aka ‘Sunday Sauce’ or ‘Sugo’) with the various kinds of meat can be poured on top of any kind of pasta - penne, fettuccine, bow pasta, rigatoni. It’s hearty kind of dish so I’d probably avoid angel hair pasta.

Bread is good to mop up the rich sauce!

You could do a side dish of broccoli or fine green beans too.

If you google Italian Sunday Gravy or New Jersey Sunday Gravy there are so many variations according to how Nonna (granny) made it. It’s delicious but I do like the Coley Cooks version which is so easy to follow. There are videos on YouTube too.

This kind of sauce is also great to make a lot of and use for a second meal. Just by changing the pasta s d making a few tweaks you can make it feel quite different. Growing up my friends’s mum used to use a similar sauce ( hers was a bolognaise) on spaghetti then next night mix it through macaroni pasta in the same you would normally use a cheese sauce, put it in an oven dish and bake with grated cheese on top. If was kind of like a meat- enriched Mac n cheese and really quite yummy.

Spaghetti sauce with macaroni cheese is what the Maltese baked pasta works out as really. A little garam masala or chilli, grated cheese and beaten eggs, and a meat and tomato sauce all mixed together and baked. Inspired by this thread, and by finding I have to go out and do stuff tomorrow afternoon, means that's what I'll have for MY Sunday dinner this week. With a green salad, to stave off scurvy.

Jamie Oliver chicken & mushroom pie (30 min book)
Bored of Lunch cocktail sausage casserole (in slow cooker)
Jamie chicken and roasted veg tray bake from Save with Jamie
Nigella Spanish chicken tray bake

Love a pie, tray bake or slow cooker meal on a Sunday!

I’m making a Moussaka today, we’ll have it with tear and share garlic and cheese bread, green beans and broccoli. Broccoli will be done in the air fryer with a little oil and spice. Can’t wait 😋
