Devise me an easy, but lovely picnic menu please!

DH's birthday on Sunday so want to do an easy, but tasty picnic for us and a couple of friends. I was thinking of roasting a chicken and taking that but need inspiration for the other bits please.

check out this thread. I posted Delia's tarragon chicken link on there, it's lovely. But lots of other suggestions on that thread which you might like.

Spanish omelette is great eaten cold.

Buy a large ciabatta, cut in half. scoop out doughy bit. Stuff with basil leaves, mozarelle, parma ham, s d toms etc etc and drizzle with olive oil over the ingredients. put back together, wrap in clingfilm and put at bottom of coolbox with something heavy on top. Cut into slices on site. Lurvely.
