Favourite pancake toppings please!

Book club meeting tonight and instead of nibbles we are all bringing a pancake topping! Any ideas?

I tried the one from Nigella's new book recently and that was yummy and simple.

Just put a punnet of blueberries in a small pan, add some maple syrup and slowly heat up until the blueberries are bursting. This only takes 5 minutes or so. Allow to cool slightly.

I dont know how mobile this is though!!

Raspberry and blueberry pancake sauce
Ingredients:
150g fresh raspberries, 150g fresh blueberries, 2 tbsp sugar, 100ml unsweetened apple juice, one pinch of ground nutmeg

Method:

  1. In a small saucepan, mix half the raspberries and half the blueberries with the sugar, apple juice and nutmeg.
  2. Bring the mixture to the boil, then reduce heat and simmer uncovered for 15 minutes.
  3. Add the remaining raspberries and blueberries, stirring the mixture until it has a smooth consistency.
  4. Serve warm over pancakes.

Found this one too which also sounds scrummy but again I only have frozen soft fruit.

Crepes or buttermilk? I'm dull and traditional and like lemon juice and sugar for the first and maple syrup for the second.

Mcd, The blueberry recipe is in Nigellas new book "Nigella Express". I have just borrowed it from the library.
The exact recipe reads -
125ml Maple Syrup
200g Blueberries

I dont think it would matter if they were frozen, I have used frozen before. Just heat them up slowly.

Put in pan, bring to the boil, let bubble for 2-3 mins, pour into a jug and then pour over pancakes!

Donbean - depends if you want to make small fluffy ones or big thin ones!
