I do a nice lemon and ginger cheese cake type thing (with no cheese) - very nice with fresh blueberries. Very easy and can make the day before.

Or a tiramisu type thing which is also easy

or trifle

I ike easy things that you make in advance but that actually look and taste more complicated

I love trifle - I did make a lime cheesecake for my mum's birthday with a stem ginger biscuit base,so might try something else...

Just do a fruit salad or strawberries and ice cream. Or sliced oranges with caramel. Nice and simple.

mmm, or I could do chestnut puree, ice cream and meringues...

oh fab I feared I was going to have to type it out - thank feck for google

it says put in four little bowls to cook but I do it in a big dish and just cook a bit longer

it is incredibly, incredibly bad

Very Easy - but very tasty : Grape Cream

Bowl of seedless white grapes. Mix in some sour cream or greek yoghurt with some dark brown moscovado sugar so that all the grapes are coated. Chill. Eat. Mmmmmmm

EAsy fruit brulee: Put mixture of fruits (e.g. strawberries, raspberries etc. - can use a pack of frozen ones) in an flame-proof bowl. Put some mini ratafia biscuits on top. Cover with greek yoghurt and sprinkle with brown sugar. put under a hot grill until sugar caramelises just before serving.

Lemon posset - one of the best for ease/fabulousness ratio!

600ml double cream
150g sugar
2 large lemons, zest and juice

Boil cream and sugar together for 3 minutes, add lemon zest and juice. Cool slightly. Pour into glasses. Chill.
