doncha just love it when a chicken from sunday tea stretches to make a meal on a Monday as well, but what can i make?

got half a chicken left and am about to make my menu list for next week.
but what can i make with my left over chicken?

also, any suggestions for meals this week?

need inspiration, on a strict budget and the freezer is almost empty.

Chicken pie - chicken and leek type pie with a cream cheese sauce and puff pastry on top.

Chicken curry

Chicken rissotto

Cold chicken with bubble and squeek

Spagetti with black pepper a nob of butter a few tomato's thrown in chopped up

pasta with cherry tomato, sweecorn and pesto stir in a little creme/creme freche

spanish omlette with par boiled potato and any lurking frozen vegtables

jacket potato and beans with grated cheese

Swap the bacon for the cheep bacon bits for a quid and buy jar garlic at the indian corner shop better and much cheaper.

Chicken in lemon sauce.

Very quick and easy for busy days.Costs next to nowt.

Make roux
Add chicken stock approx 500ml ( I use a stock cube but I am sure you could use proper stock if so inclined.)
Add juice of 1-2 lemons,(or however much you like to taste)
Add cooked chicken and ensure piping hot before serving.
Serve with rice and sweetcorn.

Oh and if you want cheep fruit go to the tin fruit section and look on the bottom shelf - 11p for mandarins in juice (broken - but who cares!!) fruit cocktail and other segments. I use these with basic plain yogurt 39p for a large pot and add some museli. Cheep but really lux breakfast or leave out the museli and a good pudding after a jacket spud meal.

Curry?

1tbs curry powder, mix with vinegar to thick paste. Mix in tbs oil and 2 tbs ketchup.

Chop onion, garlic, root ginger.

Pull chicken off carcase.

Open tin coconut milk.

Big pan - fry off onion garlic and ginger quickly, Add curry mixture, stirring. Add chicken, stir. Add coconut milk. Turn down heat and cover. Check every so often and stir occasionally.

You can chuck in dessicated coconut if you want. And potatoes, peas, anything really. If it's raw you'll have to cook it for longer. It's a pretty good way of using left overs as everything's already cooked.

And chuck the carcase into a big pan with carrot onion celery and a bay leaf, to make soup or stock.

coronation chicken with baked potatoes - my recipe is mayo, natural yog, curry powder and mango chutney...lovely!

Chicken and chick peas

Cooked chicken
Onion
tin value chopped toms
tin chick peas
garlic to your taste
cumin 1 tsp
juice of 1 lemon
Squeeze tomato puree

Fry onions until soft
Add chicken
Add chick peas
Add garlic
Add cumin
Add tomatoes
Add lemon

Leave to simmer for 20-30 mins,Add chicken stock if dries out during cooking
Serve with rice or cous cous and salad.

as barnstaple says, make soup, but after an hour simmering drain, and then take meat off bone and put back into stock with more veg and just before you serve add vermicelli for lovely filling chicken noodle soup.

Cheap and cheerful: 1 can cream of chicken (or mushroom) soup, mix in chicken pieces. Layer with cooked rice and frozen or tinned sweetcorn to make a yummy casserole. Bake for around 20 minutes at around 170.
