So have pork steaks and a rainbow trout.

Am making chili burgers anyway so not too spicy would be good.

Have in cupboard - all kinds of spices, vinegars (red wine, white wine, balsamic), and fresh garlic, lemons, ginger, thyme, rosemary, basil, shallots and a mango)

ANy ideas?

Was thinking about stuffing the fish with lemon slices, plus diced ginger/shallots/garlic and maybe some rosemary.

Am stuck with the pork steaks though. WOuld like to marinade them but not sure with what.

ANy ideas would be great.

Soy glazed pork with mango salsa

1 tbsp brown sugar
2 tbsp soy sauce
4 pork chops
1 mango , peeled and diced
1 lime , juiced
a small bunch of coriander , roughly chopped

Mix the sugar and soy sauce together and brush over the pork chops. Grill for 5 minutes each side or until cooked through, brushing more sauce over as they cook. For the salsa, mix together the mango, lime, coriander and onion.

fab as long as I can get away without the coriander.

Have some coriander seeds I think.
