Simple vegetarian recipes please

Does anyone have some simple vegetarian recipes, please? I'm not sure how to balance out the various ingredients, to replace the meat element. I also have limited access to ingredients so if I list what I can/can't get maybe recipes can be tailored to them. (Not asking much am I?? )

I can get just about any pulse, pasta and rice. Also can get ordinary bread, Lebanese flat bread, French sticks but no Italian-style bread.

Cheddar and halloumi cheese all readily available, sometimes feta as well.

No fresh milk/cream and only the occasional pot of yoghurt but eggs easy to get.

Available are onions, garlic, courgettes, tomatoes, cucumber, beetroot, carrots, lettuce, pumpkin, aubergine, cabbage, green beans all available. Also sometimes potatoes, leeks, celery. Herbs such as mint, basil, coriander are ok and I can get almost any dried spices.

Bananas, pineapple, papaya, mango, melon, lemon, oranges and lime all easy to get. Sometimes apples as well. TIA!

I think that you could whip up some excellent curries with those ingredients, both Indian and Thai. Also tomatoey pasta sauces and bakes topped with cheese.
salads made with pulses are good too. check out the veg section of the recipe bit here there are tons of recipes and you can search by ingredient.

I didn't know that recipe section existed. Thank you for pointing me there, I can see several things that look good. I already do the curries and tomato bakes - am fed up of them after two years, lol!!

YOur own pasta sauce made with loads of veg instead of meat is nice too - lots of chopped onions, garlic, courgettes, aubergine etc. Yum!

I'm fighting an uphill battle with veggie stuff as dh and dd are such carnivours. I guess the best thing is not to tell them there's no meat in their meal.
