Summer Salads and soup inspiration needed

does anyone have any yummy summer recipes?

soups/salads/light meals

i always do the same things - grilled/barbequeued salmon, chicken etc

i would like to make home made gazpacho (i think) or maybe another sort of summery soup

all recipes/tips and ideas gratefully received

it is fab, will email my receipt and summer minestrone. and seafood risotto . and tuna nicoise. courgette & halloumi. beef & veg kebabs.

We regularly have watercress soup with crusty bread
Fahitas
Grilled sardines
Couscous
cajun chicken with coleslaw
bacon, avocado and potato salad

plus bog stndard bbq fayre

is that loads of watercress, onion, potato and stock? can you serve it cold?

Puy lentil salad is my current fave and I am also loving roasted butternut squash with pine nuts and spinach.

As for soups, other cold soups include ajo blanco, which is spanish chilled almond soup, chilled asparagus soup and there is a Greek chilled avocado soupe called something like avgolemono which is great too.

do you have to roast or blanch the almonds first?

and of course there is no cheese in seafood risotto

tuna steaks with greens

marinate lamb steaks or beef in lots and lots of crushed garlic, soy sauce, sugar, salt, honey and olive oil, absolutely gorgeous
