Has anyone got a Butternut squash soup recipe?

I had a butternut squash soup in a restaurant recently and now have a butternut squash but am not sure what to do with it??? Any ideas???

Peel it and cut it into chunks and roast it first and then fry and onion and add the roasted squash and some stock. I have a recipe somewhere that also adds honey and mustard - I'll look it out if you like?

peel, chop and deseed, simmer it in some chicken stock or plain water until soft.

Puree - with stock etc. Swirl with some cream or a dollop of cream. Serve with crusty fresh warm bread.

You can also simmer it with some onion or some a potato. Put a bit of cumin in it.

peel the squash and remove the seeds, then cut it into nice chunks.

You can make a soup by sauteeing some onion and garlic in a little olive oil, adding the squash and enough water or stock to cover it all, then simmer it gnetly until soft and blend the whole lot up.

Or you could add other vegetables as well, but I'd avoid potato as it will give it a grainy starchy texture.

Other spices and herbs can be added too, a bunch of fresh coriander and some cumin makes a nice spicy version, maybe with some chillie oil drizzled on top.

DS's favourite is butternut squash and red lentil, I literally just cook up the lentils with the squash and lots of water and a garlic clove and belnd the lot when cooked. Season with salt and pepper. Really simple and delish.

A little cream or creme freche is nice added once served too, for a creamy texture.

oh yes squash orange and ginger is a great combination.

Another good one is squash and sweetcorn.

sounds good justjules, I'd add a chunk of fresh ginger to that though, but then I love the hotness of fresh ginger that you just don't get with the powder.

1 butternut squash
1 onion
2 cloves garlic
stick celery (if you have it)
3 med carrots

dice/chop, cook onion and garlic a little in olive oil, throw in squash, etc. barely cover with water, simmer 15 mins, add black pepper, chuck in crumbled veg stock cube, liquidise. add dollop cream if you like.

same as above really!!

roast chunks of butternut squash

add it to sauteed diced carrots, onions, ginger, garlic and chilli pepper

add chicken stock & some tinned tomatoes,

add coconut milk

add lots of fresh coriander and some lime juice

whizz it.

That's a fantastic soup.
