I bought it from the butcher on saturday - it's been in the fridge since, but has gone brown and smells a bit sweaty -it doesn't smell off?

It goes brown simply from contact with the air.
Not sure what you mean by sweaty, but if it doesn't smell off then it will be fine. Just make sure that you cook it thoroughly - for at least 30 minutes.

Yep contact with air will make it go brown which is why supermarket mince is sealed in packets. So long as it smells ok and you cook it well it should be fine.
