Here it is - all welcome, long termers and newbies, I imagine this week is leftovers leftovers leftovers and kicking off from Thursday onwards.

ive gone back to Oddbox and our deliveries now come on Friday nights so I’m going to try to force my brain to meal plan Thursday-Thursday and have delivery on Thursdays to make it happen. Won’t happen this week but hopefully from next

recipe was on the back of a recipe card included in my veg box, many moons ago!

500 g potatoes, cut into chunks
Butter
Chopped onion
250g carrots, diced
1 or 2 tbsp curry paste, depending on how spicy you like it
2 crushed garlic cloves
200 g peas
A small bunch of coriander, chopped
1 tin chickpeas drained
250g pack filo pastry
1 tsp black onion seeds (I don’t use these)

Cook the potatoes in boiling salted water for 3-4 minutes until almost tender but holding their shape, then drain.
Fry onion, garlic and ginger until soft. Stir in the curry paste, carrots and tomato purée, and cook for a few minutes until the carrots start to soften. Add the potatoes, peas, chickpeas and a splash of water and cook for 2-3 mins or until the veg have soaked up the sauce. Stir in the coriander.
Heat oven to fan 180C. Melt some butter in a small pan. Brush a deep 28cm x 23cm baking tray with the melted butter. Line with 4-5 sheets of filo, brushing each with more butter.
Tip in the filling, then fold over the overhanging filo. Top with 4-5 slightly scrunched sheets of filo, brushing with butter as you go. Sprinkle with the onion seeds and bake for 25 mins or until golden.

This week so far we are having:

  • Pasta puttanesca. Considering trying my hand at focaccia to go with, although I've never made bread before so may give up before I even start.
  • roasted salmon with artichokes and olives
  • black bean birria with something (new recipe to me, decided I need to branch out on beans/pulses)
  • salmon piccata (have salmon in freezer to use up)
  • quiche with potatoes (new or small jacket)

Trying to get back in the swing of things after going on holiday and then living out of the freezer for a week. My daughter is back home for reading week and is quite under the weather, so want to do some healthy food to boost her immune system.

Tonight we had squash caponata with rosemary polenta wedges, one of our favourites

Sunday - Roast chicken, roast new potatoes, cauli cheese, carrots, peas and my son might make a sticky toffee pudding

Monday - Greek style cabbage rice

Tuesday - Squash & sausage tray bake with lentils, kale & mushrooms

Wednesday - leek and tomato pasta

Thursday - Masala carrots with coconut red lentils/freezer curry for the one who doesn't like lentils

Friday - Spag bol

No fish on the dinner menu, so have bought some smoked mackerel for lunches and will have a tuna and bean salad one day too.

Friday I roasted a couple of chicken thighs and some potatoes to have with the leftover cauliflower cheese.

yesterday I made the pizza.

Today I am having a chicken breast baked over Mediterranean veggies and some potatoes.

i am also making a tomato sauce this afternoon to have with the leftover veggies and meatballs made from rosemary sausages and pasta tomorrow.

Tuesday I am out for a couple of evening receptions so only home late - so I have an avocado, cooked prawns and seafood sauce in the fridge, or crackers and cheese.

Wednesday I need to make a chicken curry - probably vadagam - and there will be a few servings leftover to freeze.

Thursday is still a blur - but probably involves something from the freezer, maybe the chicken and mushrooms.

Friday I’m doing chicken burgers as DD is here.

I went through the freezer this morning as it's overflowing and needs a clear out. Interesting, to say the least! Grin In particular I have some duck legs that must be used up and stop taking up space so I think I'm going to cook those then use them in at least two meals.

I'll be doing the shopping for delivery tomorrow probably so working further ahead than normal at this point:

Spaghetti bolognaise (might just be for DD and the freezer)
Asia style duck salad
Duck red curry
Chicken ala king
Tuna jacket potatoes with some greens
Squash and lentil soup

I also have an extra red cabbage that was accidentally delivered so thinking of toying with trying a roasted red cabbage in wedges, perhaps with lentils. Might be more of a lunch thing though?

I'm really struggling with hearty enough vegeterian options for DH and DS. They both do a LOT of exercise (DH is an exercise instructor and DS is almost 6ft tall, 14 and plays a LOT of sport as well as going to the gym) so need quite a lot of protein too.

We did a lot of lovely hearty salads and gnocchi over the summer, and lots of meals with meat but in small amounts vs the salad/veggies like tacos etc, but I'm finding it harder now. I'm rotating more halloumi/fajita style meals in and will try more soups but any ideas are appreciated. We do beans a fair bit but often as a substantial side eg tonight with salmon fillets rather than as a standalone.

Starting again....very carb heavy week and I'm craving really spicy food and still running down the freezer ready for my Christmas butchers delivery.

Monday- Breakfast ramen. New recipe to me. Looking forward to trying it and will make it extra spicy! Will also do some crispy air fryer kale and pretend it's a healthy addition 😅.
Tuesday- Chilli con carne cottage pie.
Wednesday - Cheats lahmachun with various salads and dips.
Thursday- Roast chicken & sausage stuffing on a ciabatta bun with sage and onion potato and carrot fries and tsb and gravy.
Friday - Leftover chicken and carcass used to make spicy brothy rice with whatever veg we have left over.
Saturday - Only me at home so probably just leftovers.
Sunday - OH will be hungover and craving a curry so I'll get an aloo gosht and some naan and pakoras out the freezer.

Will also make a ribollita for lunches.

cauliflower and lentil curry with naan

frozen pizza dough pizzas with our chosen toppings

veggie sausage and stuffing baguettes with roasted parsnips and honey mustard onions

have not managed to stick to meal plan at ALL this week so shopping now, finishing off last week, and trying to make sure I use up the things in the fridge that need to be eaten:

Grilled salmon with miso and green veg and noodles
Roasted veg quesadillas
Chicken and broccoli one pan lasagna (adding cabbage - I have a glut)
Paella
Pork mince stir fry to use up all the veg that haven't been properly eaten over the last week!
Savoy cabbage, pancetta and pine nut pasta

I have leftover rotisserie chicken from Friday night (about 1 dinners worth) and a defrosted chicken breast to cook (also thawed on Friday). Lots of veg. But only 2 onions.

so I am possibly doing a Greek lemon and herb dressing on the raw chicken. And cook in g that tonight to have with salad tomorrow. And maybe chicken risotto tonight when I get home with the rotisserie leftovers.

I’ll try to get to the supermarket in Netherlands once I drop DD to airport shortly, as they are open on Sundays (not open in Belgium on Sundays). So if I see anything interesting, that will shape my menu planning. But I have enough frozen to just do batch cooked dinners, with a steak or duck breast one night, if I don’t get any fresh things.

and this week, I have a couple of evening receptions so won’t want to fuss over cooking, but also a public holiday for the Armistace on Tuesday so will do the steak/duck/something else with proper cooking them.

Monday: chilli con carne (and a portion of the burnt aubergine one from the freezer for vegetarian DD) with rice and deconstructed guacamole
Tuesday: cauliflower and chickpea curry with rotis
Wednesday: pasta puttanesca
Thursday: sausages with puy lentils (vegetarian version for DD)
Friday: smoked haddock and leek risotto (copying a PP - thanks for the idea!)

I haven't posted for a while because I started taking Mounjaro which made meal planning tricky, but now I'm more used to it, the meals for this week are/have been:

Sunday: lasagne and salad
Monday: white fish and potatoes in arrabiata sauce
Tuesday: Turkey soup noodles
Wednesday:cheesy creamy tofu cannelini beans with kale and broccoli
Thursday: sea bass cooked with olives, capers and white wine with new potatoes, peas and broccoli
Friday: pizza and salad
Saturday: going out, so everyone staying in can forage in the freezer.
Sunday: chicken stew with chorizo, beans, olives and preserved lemon, with garlicky greens.

I made a chicken risotto with most of the leftover rotisserie chicken on Sunday night. And the last of the chicken stock in the freezer.

I also threw the piece of raw chicken in the oven with some oil and vinegar’s lemon and herb rub and 2 ice cubes of lemon juice. Which I had cold with salad on Monday.

Tuesday was steak, roasted baby potatoes, and roasted portobello mushrooms with blue cheese.

On Tuesday, I also made a slow-cooked coq au vin, for Wednesday (and 1 portion for freezer), which I had with creamy buttery mash.

Yesterday I had a chicken vadagam with rice and puppodums.

I have taken a pasta bake from the freezer for tonight.

And tomorrow, I need to get some hummus and flatbreads, but I have some pork gyros for a Greek night.

I need to make an easy but delicious early tea for friends tomorrow, before going to a concert. I really fancied a tagine and salad, but not sure it’s the weather for it.

Not planned next week yet, but one meal needs to involve tofu and another needs to be really quick and easy.

I follow her on instagram and I really like her recipes. I did this a few weeks ago and DS in particular absolutely loved it.

It wasn’t me who asked for this recipe but when you posted it I was tempted, so I made it tonight and it was delicious! Thanks.

Everyone enjoyed it - including my fussy younger DD - and vegetarian DD had a veg lasagne from the freezer. I’m looking up more of her recipes to try.

Haven't updated recently but have just read through the last couple of weeks' updates and there are some great ideas - will be making some notes for future plans.

In the meantime, this week's plan is:

Tonight: Spag bol, salad, garlic bread (crowdpleaser for friends and their kids coming around)
Tomorrow: Mushroom quinotto
Tuesday: Cannelinni bean stew with braised courgettes and spinach
Wednesday: Mushroom and spinach curry
Thursday: Turkey kebabs with chickpea, sweet potato and tahini salad.
Friday: Out at a 60th birthday bash - going straight from work so hoping for a decent buffet.

Saturday: Pierlini with mushroom sauce base, bacon and tomatoes with salad
Sunday: Chicken kebabs and Greek salad with pittas and tzatziki.
