Here it is - all welcome, long termers and newbies, I imagine this week is leftovers leftovers leftovers and kicking off from Thursday onwards.

ive gone back to Oddbox and our deliveries now come on Friday nights so I’m going to try to force my brain to meal plan Thursday-Thursday and have delivery on Thursdays to make it happen. Won’t happen this week but hopefully from next

We ended up getting a good pizza kit in the farmers market for last Saturday - and covered it in pepperoni, njuda, onion, olives, peppers and mushroom.

our neighbour did a beautiful salmon with lentils meal, finished with apple and blackberry crumble.

Monday, I had a ham and cheese toastie on the plane.

On Tuesday, I had feta chicken, with roasted tomatoes, garlicky french beans and roast lemon people and garlic baby potatoes.

Wednesday, I had a steak I brought back with me, more of the same potatoes and the last of the beans.

Thursday I made the lamb koftas, served on flatbreads with hummus, Greek yoghurt, olives, lettuce, tomato, avocado, and some red onion that I pickled myself.

last night was a Lamb bhuna curry.

I actually don’t have freezer space for a spag Bol, so I am using up things from there mostly this week. It’s also “back to work” week and I expect it will be busy so convenience will win!

today- cod, lemon courgette and steamed baby potatoes.

Tomorrow - lemon garlic chicken, Mediterranean veggies and roasted baby potatoes.

Monday chicken and mushroom sauce - on rice, pasta or vol au vents

Tuesday pasta with a sausage meatballs and veggies sauce from freezer.

Wednesday will be curry (probably chicken vadagam but I have a lamb rogan Josh too) and rice

Thursday possibly half a duck breast and oven chips.

Friday…I may treat myself to dinner out (especially if we go for a beer after work as a team).

When I had a glut of courgettes, among the things I tried was a courgette cake - which was delish! Similar idea to a carrot cake, a loaf cake with a creamy topping. I can’t remember the recipe but might be worth googling.

Then this week we are have ingredients for:
Chicken burrito bowls
Baked chicken thighs with veg, potatoes and mybe yorkshire pudding
Pork mince stir fry
Bobotie
Hot honey halloumi and chargrilled greens on tortillas

Then possibly fresh tuna with fried rice and/or lamb and aubergine curry (this is with ingredients from freezer/store cupboard, minus the aubergine).

Maple Pecan Pie Bars - tastes like pecan pie - but so much easier to make!! LOVE the maple syrup flavour in this.

We're back to some semblance of order.

DP made a lovely dhal on Monday
Last night, ds did a tofu and tender stem Thai curry
I'm on duty tonight so it's a frozen feta and spinach pie, with salad and I'll make tzatziki.
Tomorrow, dp is very excited to be making his autumnal leek and potato pie.
Friday will be freezer crap or salad or something on toast.
We're eating out on Saturday.
And then it starts all over again.

not much work on for me but back to school for the kids so excited to being organised again! and I have totally copied several of you....

Thursday: tandoori tikka salmon traybake
Friday: friends over for dinner, haven't planned yet but lots of fussy teens so will need to be easy
Saturday: Steak/veggie steak, chips and green beans
Sunday: thai green tofu curry
Monday: fish tacos
Tuesday: lentil kofta/Chicken Schwarma, rice and fattoush
Wednesday: African Peanut Stew
Thursday: lemon, butterbean and green herb stew

Definitely autumn here too as considering soups for lunch and post school! Making a sort of red lentil/Dal version this week. Leek and potato on list. Tinned tomato in shopping trolley!

Dinner - v chicken heavy and no veggie options so need to compensate next week.

Bobotie (didnt do this week as meat box didnt arrive!)
Slow cooker butter chicken
One pan chicken and broccoli lasagna (new - excited to try)
Stuffed chicken breasts on roasted gnocchi with veg
Spaghetti and meatballs
Fish with beans and spinach

I think it originated in an old school cookery book!

Cook mashed potatoes

Saute leeks and onions in butter until soft

mix together with a shed load of grated cheese

put in a dish and put more cheese on top

bake

My mum used to make a similar thing but in a pastry case, which was a cheesy carby comfort food of the gods.

I like it with salad but dp prefers it with peas and HP sauce, which is a pretty darn good thing tbh.

No days because we will work it out as we go but starting next Wednesday:

salmon and saag aloo traybake
Nigella’s gnocchi gratin with extra bits (might be veg might be bacon depends what’s left) and garlic bread
sausage casserole
venison meatball pasta
Halloumi tacos with guacamole, fresh salsa etc
something with chicken thighs in the slow cooker - might be curry, might be marry me chicken

Hope everyone has had a good weekend! We've had shop bought pies, boiled potatoes and cabbage, carrots and green beans tonight, was lovely to do something really easy for a change, though I do love cooking usually. The rest of the week is:

Monday - Lentil and leek kedgeree with smoked mackerel (first time I will have made this). I've also made some hummus to have with pasta for lunch as I'm working from home tomorrow.

Tuesday - Pasta with spinach and blue cheese/cheesy broccoli pasta

Wednesday - Turkish runner bean and bulgur wheat pilaf with garlic yoghurt (another new recipe)

Thursday - Spaghetti chow mein/stir fry

Friday - Squash, Rosemary & Chilli Pasta, but need to make this in advance to take on holiday for an easy first night. Have also got some meatballs and a jar of sauce for my son who doesn't like squash

Haven't posted for a while as have had mum staying - she's not into meal planning and food has been frustratingly reactive to her wants - resulting in expense and waste. It has really brought home the benefits of planning.

Now we're back to normal, our week looks like:

Today: Creamy leek and courgette butter beans
Tomorrow: PiLs for dinner
Wednesday: Greek salad pasta
Thursday: Minestrone
Friday: Roast veg gnocchi bake
Saturday: Fabada
Sunday: Jambalaya

I did eat my Mon/Tues meals, and defrosted the ragu. But had an M&S rarebit one night. Then DH arrived unexpectedly on Thursday so had to feed him (thankfully, tin of duck confit and tin of French beans with some roasted baby potatoes worked well - but the defrosted ragu ended up unused). We went out Friday and cooked chicken escalopes on a bed of tomato sauce, and burgers, for sat/sunday. With a rotisserie chicken acquired to feed teen DD on Sunday (also unexpectedly turned up).

She’s now gone as of early this morning, he goes late afternoon - so tonight will be “raid the fridge leftovers”.

tomorrow, I need to go out to a work thing.

Wednesday I will do feta chick with the last of the open feta, and green beans.

Thursday probably pizza to use pepperoni and a half ball of mozarella.

Friday..my brain cells will find inspiration…or I’ll go out.

Saturday, I am probably doing Greek night (lemon/garlic chicken, halloumi slices, med veggies, baby roasties, tzatziki, hummus, grilled flatbreads, salads, olives; cheeseboard; gateau from bakery) for work colleagues.

Sunday will be leftovers again.

Have been putting together a plan for next week (will do the big shop tomorrow) and getting really excited by the prospect of autumn - cabbages, sausages, pumpkin and squash, crumbles, stews and soups...

In addition to the fabada and jambalya already planned for this weekend, I'm now planning:

Monday: Root veg soup with apple and rhubarb crumble
Tuesday: Rice with sausages, cabbage and beans
Wednesday: Veggie chilli
Thursday: Stir-fried chilli cabbage and noodles
Friday: Baked breaded cod, potato wedges, carrots and peas

Ooh. I think I need a crumble. Might just do a ploughman’s lunch followed by crumble one night next week.

Veggie sausage casserole with hasslebacks, if we can manage to source vegan hotdogs.

Will sort the rest out ready for a delivery on Sunday. I plan figs, dates, walnuts and yoghurt to feature heavily in my life next week too.

Frys do frozen vegan hotdogs which are nice. They sell them in Morrisons and Iceland.

I have to doa very quick shop today while DD is at an activity. So I will probalby just do for the next 2-3 days then sit down and think properly for next week. Also, I prefer online deliveries on Sunday/monday so berries etc can last the week for school!

Tonight - some version of ready-made or almost ready made food. Pizza/burgers/ready meal etc as I have no idea how many people we're feeding, or even if we're eating at home!

Tomorrow: we are going to the afterparty for a wedding so I think I'll do a quick pasta with a fresh tomato sauce before we leave, possibly with the last of the IKEA meatballs for DH and DC.

Sunday: Chicken burrito bowls

Monday: Chickpea and pepper curry. Might add aubergine as it's not DS' favourite but he loves an aubergine!

I'm also looking forward to savoy cabbage so I can make the Jamie Oliver cabbage/bacon/pine nut thing we all talked abotu endlessly on here last year. I need to remind myself what I decided need to be changed in the recipe though, will have to scroll through the chat!! Grin

M- flatbread pizzas
T - roast pork dinner
W - sardine limguine
T - pesto chicken pasta

That’s for me, husband, a 4 year old and a 3 year old. 😊

Yep. these are the ones we stock up on, but have to make a special trip to Morrisons to do so, as we don't usually shop there. They're really good.
