What pudding can I make

Any suggestions for a simple pudding I can throw together having guests arrive in 1hr

Citrus sponge with custard or ice cream.

Basic sponge recipe:
Mix equal amounts of butter, sugar, egg and flour in that order. (Use one egg per 2oz of flour)

Add grated zest of lemon and juice. Place in a pyrex dish at gas 4/5 cook until firm about 30- 40 minutes.
